Ingredients
- 4 potatoes (1/2 lb.), thinly sliced
- 3 eggs, beaten
- 1/4 c. evaporated skim milk
- 1/3 c. shredded Cheddar cheese
- oregano
Method
- Steam potatoes just until tender; transfer to 8-inch pan.
- In bowl, beat together remaining ingredients.
- Heat over medium heat. Add egg mix to potatoes.
- Cook, stirring frequently to keep even. When eggs are no longer runny, lift edge of Frittata and let any extra uncooked egg get underneath.
- Invert onto plate and let sit before slicing in two.
- (Great side dish.)
