Ingredients

  • 4 potatoes (1/2 lb.), thinly sliced
  • 3 eggs, beaten
  • 1/4 c. evaporated skim milk
  • 1/3 c. shredded Cheddar cheese
  • oregano

Method

  • Steam potatoes just until tender; transfer to 8-inch pan.
  • In bowl, beat together remaining ingredients.
  • Heat over medium heat. Add egg mix to potatoes.
  • Cook, stirring frequently to keep even. When eggs are no longer runny, lift edge of Frittata and let any extra uncooked egg get underneath.
  • Invert onto plate and let sit before slicing in two.
  • (Great side dish.)
