Ingredients
- 1 medium potato, peeled and cooked
- 1/4 c. flour
- 1/2 tsp. salt
- 1 egg, slightly beaten
- 1 Tbsp. minced parsley
- 1/4 tsp. pepper
Method
- Mash the potato with a fork.
- Add egg, flour, parsley, salt and pepper.
- Blend well.
- Bring 6 cups water to a boil in a large saucepan.
- Drop batter by tablespoons into boiling water.
- When dumplings rise to the surface, reduce heat to medium-low, cover and simmer 12 to 15 minutes.
