Ingredients
- 1/2 c. cold potatoes, mashed
- 4 c. sifted confectioners sugar (or enough to make fondant easy to handle)
- pinch of salt
- 1/2 tsp. vanilla
Method
- Mix well, then turn out on a piece of waxed paper and roll into a rectangle about 1/4 inch thick.
- Spread with 1/2 cup of peanut butter (creamy or chunky style).
- Roll up like jelly roll and chill for about 8 hours.
- Cut into 1/4-inch thick slices.
