Ingredients

  • 1 lb. smoked ham, cubed
  • 1 1/2 c. dried kidney beans
  • 1 (8 oz.) can tomato sauce
  • 4 stalks celery, chopped
  • 1 c. onion, chopped
  • 6 cloves garlic, chopped
  • salt and pepper to taste
  • 3 carrots, chopped
  • 3 medium potatoes, peeled and chopped

Method

  • Cook ham in water to cover by 1 inch in 2-quart saucepan for 30 minutes or until tender.
  • Add beans.
  • Cook, covered, until beans are half-cooked.
  • Add tomato sauce, celery, onion, garlic, salt and pepper.
  • Simmer for 20 minutes.
  • Add carrots and potatoes.
  • Simmer for 20 minutes longer or until vegetables are tender.
  • Serves 8.
