Ingredients
- 1 lb. smoked ham, cubed
- 1 1/2 c. dried kidney beans
- 1 (8 oz.) can tomato sauce
- 4 stalks celery, chopped
- 1 c. onion, chopped
- 6 cloves garlic, chopped
- salt and pepper to taste
- 3 carrots, chopped
- 3 medium potatoes, peeled and chopped
Method
- Cook ham in water to cover by 1 inch in 2-quart saucepan for 30 minutes or until tender.
- Add beans.
- Cook, covered, until beans are half-cooked.
- Add tomato sauce, celery, onion, garlic, salt and pepper.
- Simmer for 20 minutes.
- Add carrots and potatoes.
- Simmer for 20 minutes longer or until vegetables are tender.
- Serves 8.
