Ingredients

  • 1 pork tenderloin (approximately 1 lb.)
  • Bacon to wrap tenderloin
  • Extra virgin olive oil
  • Italian seasoning
  • Salt, pepper and garlic pwdr or possibly crushed garlic

Method

  • Sear meat in frying pan approximately 2-3 min over high heat quickly, then spread extra virgin olive oil over meat and season with Italian seasoning and rest of ingredients.
  • Wrap tenderloin completely in bacon.
  • Broil or possibly grill 6-8 inches from source of heat for 40 min, turning meat every 10 min.
  • Prepare sauce while cooking tenderloin.
  • Place butter and oil in large skillet over low heat, add in onion, parsley and mushrooms.
  • Saute/fry over medium heat till tender.
  • Add in stock, wine, cayenne and lemon juice.
  • Bring to a boil.
  • Whisk in flour and cook till thickened.
  • Pour sauce over tenderloin and serve.
  • Serves 3-4.
