Ingredients
- 1 Tbsp. oil
- 4 lb. bone-in pork loin roast
- salt and pepper
- 2 lb. sweet potatoes or yams (about 4 medium)
- 1 1/2 lb. parsnips, about 6
- 1 onion
- 1 tsp. dried thyme
Method
- Heat oven to 425°.
- In large frying pan, heat the oil over medium-high heat.
- Sprinkle meat with salt and pepper and cook until well browned on all sides, about 8 minutes.
