Ingredients
- 3 Tbsp. butter or oleo
- 3 Tbsp. flour
- 1 1/2 tsp. pepper
- 1 (14 1/2 oz.) can chicken broth
- 6 pork chops
- 3 Tbsp. oil
- salt and pepper
- 6 c. thinly sliced peeled potatoes
- 1 medium onion, sliced
- paprika and fresh parsley (optional)
Method
- In a saucepan, melt butter. Stir in flour, salt and pepper. Add chicken broth; cook and stir until mixture boils. Cook for 1 minute. Remove from heat and set aside.
- In a skillet, brown chops in oil. Season more if desired.
- In a greased 9 x 13 x 2-inch baking dish, layer potatoes and onion. Pour broth mixture over. Place chops on top.
- Cover and bake 1 hour at 350°. Uncover and bake 30 minutes longer or until potatoes are tender. Sprinkle with parsley and paprika if desired.
