Ingredients

  • 3 Tbsp. butter or oleo
  • 3 Tbsp. flour
  • 1 1/2 tsp. pepper
  • 1 (14 1/2 oz.) can chicken broth
  • 6 pork chops
  • 3 Tbsp. oil
  • salt and pepper
  • 6 c. thinly sliced peeled potatoes
  • 1 medium onion, sliced
  • paprika and fresh parsley (optional)

Method

  • In a saucepan, melt butter. Stir in flour, salt and pepper. Add chicken broth; cook and stir until mixture boils. Cook for 1 minute. Remove from heat and set aside.
  • In a skillet, brown chops in oil. Season more if desired.
  • In a greased 9 x 13 x 2-inch baking dish, layer potatoes and onion. Pour broth mixture over. Place chops on top.
  • Cover and bake 1 hour at 350°. Uncover and bake 30 minutes longer or until potatoes are tender. Sprinkle with parsley and paprika if desired.
