Ingredients

  • 1 c. raisins
  • 1 c. boiling water
  • 3 eggs
  • 1 c. oil
  • 2 c. sugar
  • 1 (12 oz.) can pork and beans, remove fat pieces
  • 1 tsp. vanilla
  • 3 c. flour
  • 1/2 tsp. soda
  • 1/2 tsp. baking powder
  • 1/2 tsp. salt
  • 1 c. chopped nuts

Method

  • Pour boiling water over raisins and set aside.
  • Beat eggs, oil, sugar, vanilla and beans until broken up.
  • Can use blender. Add flour and remaining ingredients, including raisins and water; mix well.
  • Pour batter into well-greased and floured bread loaf pan.
  • If small pans, makes 3.
  • If large pans, makes 2.
  • Bake at 325° for 50 to 60 minutes.
