Ingredients
- 1 kg Ripe Plum Tomatoes, cut in half
- 20 grams Salt
- 1 tbsp Dried Oregano
- 6 tbsp Extra Virgin Olive oil
- 20 Basil Leaves, shredded
Method
- Preheat oven to 70c/160f
- Place tomato halves on baking tray and sprinkle with salt and oregano.
- Cook in oven for 2-3hrs or until moisture has evaporated.
- Add olive oil and bake for further hour.
- Leave to cool, add basil leaves then serve.
