- 2 c. flour
- 2 c. sugar
- 1 tsp. baking powder
- 1 tsp. baking soda
- 1 c. salad oil
- 3 eggs
- 2 tsp. vanilla
- 1/2 c. water
- 2 c. shredded carrots
- 1 (8 oz.) can crushed pineapple
- 1 c. coconut
- 1 c. chopped nuts
- 1 c. heavy cream
- 1 pkg. vanilla instant pudding
- 1 1/2 c. milk
Method
- Sift dry ingredients all together.
- Add eggs, oil, vanilla and water.
- Beat for 2 to 3 minutes with electric mixer.
- Add carrots, pineapple, coconut and nuts, folding in by hand.
- Pour into a greased and floured 9 x 13-inch pan.
- Bake at 350° for 30 minutes.
