Ingredients

  • 2 c. flour
  • 2 c. sugar
  • 1 tsp. baking powder
  • 1 tsp. baking soda
  • 1 c. salad oil
  • 3 eggs
  • 2 tsp. vanilla
  • 1/2 c. water
  • 2 c. shredded carrots
  • 1 (8 oz.) can crushed pineapple
  • 1 c. coconut
  • 1 c. chopped nuts
  • 1 c. heavy cream
  • 1 pkg. vanilla instant pudding
  • 1 1/2 c. milk

Method

  • Sift dry ingredients all together.
  • Add eggs, oil, vanilla and water.
  • Beat for 2 to 3 minutes with electric mixer.
  • Add carrots, pineapple, coconut and nuts, folding in by hand.
  • Pour into a greased and floured 9 x 13-inch pan.
  • Bake at 350° for 30 minutes.
