Ingredients

  • 3 Tbsp. butter or margarine
  • 1/4 c. flour
  • 1/4 tsp. salt
  • 1 c. chicken broth
  • 1 Tbsp. lemon juice
  • 1 Tbsp. parsley
  • 1 tsp. grated onion
  • 1 1/2 c. diced cooked chicken
  • 1 doz. tortillas
  • dash each: paprika, nutmeg and pepper

Method

  • Melt butter; blend in flour and salt.
  • Add broth.
  • Cook and stir until thick.
  • Add lemon juice, parsley, onion, paprika, nutmeg and pepper.
  • Stir in chicken.
  • Cool slightly.
  • Warm tortillas until soft.
  • Place 1 tablespoon of chicken mixture on each tortilla; roll and secure with toothpick.
  • Fry in deep hot oil at 350° for 1 to 2 minutes, until crisp.
  • Serve with guacamole.
