Ingredients
- 3 Tbsp. butter or margarine
- 1/4 c. flour
- 1/4 tsp. salt
- 1 c. chicken broth
- 1 Tbsp. lemon juice
- 1 Tbsp. parsley
- 1 tsp. grated onion
- 1 1/2 c. diced cooked chicken
- 1 doz. tortillas
- dash each: paprika, nutmeg and pepper
Method
- Melt butter; blend in flour and salt.
- Add broth.
- Cook and stir until thick.
- Add lemon juice, parsley, onion, paprika, nutmeg and pepper.
- Stir in chicken.
- Cool slightly.
- Warm tortillas until soft.
- Place 1 tablespoon of chicken mixture on each tortilla; roll and secure with toothpick.
- Fry in deep hot oil at 350° for 1 to 2 minutes, until crisp.
- Serve with guacamole.
