Ingredients

  • 1 1/2 c. water or skim milk
  • 3 Tbsp. lemon juice
  • 1 bay leaf
  • a few cloves or peppercorns
  • 1 lb. fish fillets or steaks of your choice

Method

  • Stir together water, lemon juice, onion and seasonings in a large skillet.
  • Bring to a simmer.
  • Add fish; cover and adjust heat to maintain a simmer.
  • Cook 10 minutes per inch of thickness of thickest part of fish, probably 5 to 10 minutes.
  • Fish is done when it is opaque and flakes easily with a fork.
  • Don't overcook or it becomes tough and dry.
  • Serve hot with sauce or lemon juice or cold in chunks in salad.
