Ingredients
- 1 1/2 c. water or skim milk
- 3 Tbsp. lemon juice
- 1 bay leaf
- a few cloves or peppercorns
- 1 lb. fish fillets or steaks of your choice
Method
- Stir together water, lemon juice, onion and seasonings in a large skillet.
- Bring to a simmer.
- Add fish; cover and adjust heat to maintain a simmer.
- Cook 10 minutes per inch of thickness of thickest part of fish, probably 5 to 10 minutes.
- Fish is done when it is opaque and flakes easily with a fork.
- Don't overcook or it becomes tough and dry.
- Serve hot with sauce or lemon juice or cold in chunks in salad.
