Ingredients

  • 6 medium potatoes
  • 2 c. shredded sharp cheese
  • 1/4 c. margarine
  • 1 1/2 c. sour cream
  • 1/3 c. chopped onions
  • 1 tsp. salt
  • 1/4 tsp. pepper
  • 2 tsp. margarine
  • sprinkle of paprika

Method

  • Cook potatoes with skins; cool off.
  • Shred potatoes on big side of grater.
  • Put shredded cheese and 1/4 cup margarine in saucepan; let it melt.
  • Remove from stove.
  • Put sour cream, onions, salt and pepper in.
  • Fold into potatoes in greased casserole.
  • Dot with 2 teaspoons margarine; sprinkle paprika on top.
  • Bake at 350° for 25 to 30 minutes.
