Ingredients
- 1/2 c. butter or margarine
- 1 c. sugar
- 2 eggs, separated
- 1/2 tsp. vanilla
- 2/3 c. undrained crushed pineapple
- 1 3/4 c. all-purpose flour
- 1 1/2 tsp. baking powder
- 1/4 tsp. salt
Method
- Cream butter until light and fluffy.
- Gradually add sugar and beat well.
- Beat in egg yolks and vanilla.
- Add pineapple and sifted dry ingredients.
- Fold in stiffly beaten egg whites into batter.
- Pour
- into a 9 x 5 x 3-inch loaf pan lined with wax paper.
- Bake at 350° for 50 minutes.
- Cool and frost.
