- 1 lb. hamburger
- 1/3 c. chopped onion
- 2 c. cooked pinto beans
- 2 tsp. Worcestershire sauce
- 2 tsp. chili powder
- 2 c. canned tomatoes or 1 c. catsup
- 3/4 tsp. salt
- 2 Tbsp. flour
- 10 Tbsp. self-rising cornmeal
- 1/2 c. buttermilk
- 1 egg, beaten
- 1 1/2 Tbsp. oil
Method
- Brown hamburger and onion; drain off fat.
- Add Worcestershire sauce, chili and tomatoes or catsup.
- Add beans.
- Pour into a 13 x 9-inch casserole.
- Mix the flour, cornmeal, buttermilk, egg and oil.
- Stir until blended.
- Spread on top of bean mixture.
- Bake for 20 minutes at 425°.
- Good with slaw or tossed salad.
