Ingredients

  • 1 lb. hamburger
  • 1/3 c. chopped onion
  • 2 c. cooked pinto beans
  • 2 tsp. Worcestershire sauce
  • 2 tsp. chili powder
  • 2 c. canned tomatoes or 1 c. catsup
  • 3/4 tsp. salt
  • 2 Tbsp. flour
  • 10 Tbsp. self-rising cornmeal
  • 1/2 c. buttermilk
  • 1 egg, beaten
  • 1 1/2 Tbsp. oil

Method

  • Brown hamburger and onion; drain off fat.
  • Add Worcestershire sauce, chili and tomatoes or catsup.
  • Add beans.
  • Pour into a 13 x 9-inch casserole.
  • Mix the flour, cornmeal, buttermilk, egg and oil.
  • Stir until blended.
  • Spread on top of bean mixture.
  • Bake for 20 minutes at 425°.
  • Good with slaw or tossed salad.
