- 3 Tbsp. butter
- 1/2 c. brown sugar, packed
- 7 pineapple slices, well drained (save juice)
- 1/3 c. softened butter
- 1/2 c. sugar
- 1 egg
- 1 tsp. vanilla
- 1 1/4 c. flour
- 2 tsp. baking powder
- 1/4 tsp. salt
- 1/2 c. pineapple juice liquid
Method
- Preheat oven to 350°.
- Melt butter (3 tablespoons) in a 9-inch layer pan in oven.
- Sprinkle brown sugar over butter.
- Arrange fruit in sugar mixture in pan.
- Mix 1/3 cup butter with sugar until creamy.
- Add egg and vanilla.
- Beat well.
- Mix flour, baking powder and salt thoroughly.
- Mix pineapple juice into creamy batter. Spread batter over fruit in the pan.
- Bake at 350° for 35 to 40 minutes.
- Cool a few minutes in pan (so topping doesn't run). Loosen cake from sides of pan.
- Place service plate over pan and turn over.
