Ingredients

  • 3 Tbsp. butter
  • 1/2 c. brown sugar, packed
  • 7 pineapple slices, well drained (save juice)
  • 1/3 c. softened butter
  • 1/2 c. sugar
  • 1 egg
  • 1 tsp. vanilla
  • 1 1/4 c. flour
  • 2 tsp. baking powder
  • 1/4 tsp. salt
  • 1/2 c. pineapple juice liquid

Method

  • Preheat oven to 350°.
  • Melt butter (3 tablespoons) in a 9-inch layer pan in oven.
  • Sprinkle brown sugar over butter.
  • Arrange fruit in sugar mixture in pan.
  • Mix 1/3 cup butter with sugar until creamy.
  • Add egg and vanilla.
  • Beat well.
  • Mix flour, baking powder and salt thoroughly.
  • Mix pineapple juice into creamy batter. Spread batter over fruit in the pan.
  • Bake at 350° for 35 to 40 minutes.
  • Cool a few minutes in pan (so topping doesn't run). Loosen cake from sides of pan.
  • Place service plate over pan and turn over.
