Ingredients
- 5 medium sweet potatoes
- 3 Tbsp. melted butter
- 6 Tbsp. nuts (pecans or walnuts)
- 1 (8 1/2 oz.) can crushed pineapple, undrained
Method
- Scrub and boil potatoes until tender.
- Peel and mash, adding butter and undrained pineapple.
- Beat with wooden spoon until smooth and light.
- Stir in 5 tablespoons nuts and turn into buttered casserole.
- Bake covered at 375° for 20 minutes.
- Remove cover; sprinkle with remaining nuts and continue baking for another 10 minutes.
