Ingredients

  • 1/2 c. vegetable shortening
  • 1 c. (2 sticks) butter or margarine
  • 2 3/4 c. granulated sugar
  • 6 large eggs
  • 3 c. sifted all-purpose flour
  • 1 tsp. baking powder
  • 1/4 c. milk
  • 1 tsp. vanilla extract
  • 3/4 c. undrained crushed pineapple
  • 1/4 c. (1/2 stick) butter or margarine, melted
  • 1 1/2 c. confectioners sugar
  • 1 c. crushed pineapple, drained

Method

  • Grease and flour a 10-inch tube pan; set aside.
  • In a large bowl, cream the shortening, butter and sugar.
  • Add the eggs, one at a time, beating thoroughly after each addition.
  • In another bowl, sift the flour and baking powder.
  • Add the flour in small batches to the creamed mixture alternately with the milk, beginning and ending with the flour.
