Ingredients

  • 1 cup sifted cake Flour* 2 teaspoons baking powder
  • 1/2 butter
  • 4 large eggs(seperated)3 teaspoons vanilla
  • 1 cup heavy cream
  • 3/4 cup chopped pecans* 2 teaspoons confectioner'sugar

Method

  • Heat oven to 350*grease two 8 inch cake pans*Sift flour baking powder& salt* cream butter & 1/2 sugar until fluffy*add egg yols add 1 teaspoon vanilla,flour mixtrure & milk divide batter in pans.Whip egg whites add 1 cup of sugar & 1 teaspoon of vanilla until hign peaks*spread meringue mixture on cake batter & sprinkle pecans0Bake 30 to 40 minutes cool*whip heavy cream with conf sugar add drained pineapple& assemble cake-spread cream mixture between layers & refrigerate
