Ingredients

  • 1 large ripe pineapple
  • 1/3 c. honey
  • 1/4 tsp. ground ginger
  • 1/3 c. butter
  • 2 Tbsp. lime juice

Method

  • Remove leafy top of pineapple and reserve.
  • Cut pineapple lengthwise into 8
  • wedges.
  • Cut
  • off
  • core
  • of each wedge, then slash vertically
  • 1-inch
  • apart
  • down
  • to but not through skin. Heat butter
  • in
  • small
  • saucepan on grill until melted. Add honey, lime
  • juice
  • and
  • ginger.
  • Brush
  • cut
  • surfaces
  • of pineapple with the lime
  • juice.
  • Place spears on the grill for 15 minutes, turning every 5 minutes and brushing with the lime mixture.
