Ingredients

  • 2 envelopes unflavored gelatin
  • 4 Tbsp. cold water
  • 1 c. boiling water
  • 1 (No. 2) can crushed pineapple, undrained
  • 1 qt. whipped topping
  • 1 large angel food cake
  • 1 qt. whipped topping
  • 1 can shredded coconut

Method

  • Dissolve gelatin in cold water.
  • Add boiling water and pineapple.
  • Chill until firm and add 1 quart whipped topping. Fold in the angel food cake, which has been broken into bite size pieces.
  • Press mixture into a 9 x 13-inch pan.
  • Let set in refrigerator until firm. Top with whipped topping and coconut.
