Ingredients
- 1 20 oz. can crushed pineapple
- 1 med size bottle of cherries (cut into pieces) and cherry juice
- 2/3 c. white sugar
- 3 Tbsp. cornstarch
- pinch of salt
- 2 eggs
- coconut
Method
- Mix together pineapple, cherries, juice, sugar, cornstarch and salt, cook until thick.
- Add beaten yolks and cook 2 minutes longer.
- Pour over crust.
- Beat egg whites and add 1/4 sugar and spread over square.
- Sprinkle with coconut.
- Brown in a 400° oven.
