Ingredients
- 2 (2 oz.) cans pineapple chunks
- 1 1/2 c. grated Cheddar cheese
- 6 Tbsp. pineapple juice
- 6 Tbsp. plain flour
- 1 c. sugar
- 1 1/2 sticks butter, melted
- 1 1/2 sleeves crushed Ritz crackers
Method
- Drain pineapple and save juice.
- Add grated cheese to drained pineapple.
- In another bowl, sift flour and add sugar.
- Mix with pineapple juice.
- Pour over pineapple, stir well.
- Spoon into a 2-quart buttered casserole dish.
- Crush Ritz crackers and combine with butter.
- Spread over top of mixture in the casserole.
- Bake at 350° for 30 minutes.
