Ingredients

  • 2 (2 oz.) cans pineapple chunks
  • 1 1/2 c. grated Cheddar cheese
  • 6 Tbsp. pineapple juice
  • 6 Tbsp. plain flour
  • 1 c. sugar
  • 1 1/2 sticks butter, melted
  • 1 1/2 sleeves crushed Ritz crackers

Method

  • Drain pineapple and save juice.
  • Add grated cheese to drained pineapple.
  • In another bowl, sift flour and add sugar.
  • Mix with pineapple juice.
  • Pour over pineapple, stir well.
  • Spoon into a 2-quart buttered casserole dish.
  • Crush Ritz crackers and combine with butter.
  • Spread over top of mixture in the casserole.
  • Bake at 350° for 30 minutes.
