Ingredients

  • 1kg desiree potatoes (peeled and cut into 3cm pieces)
  • 2 anchovies (mashed)
  • 3 tbsp extra virgin olive oil
  • 1 1/2 tsp lemon juice
  • 1 tsp lemon rind (finely grated),
  • 1 large ripe avocado (peeled, seeded and sliced)
  • 2 tbsp flat-leaf parsley leaves (chopped) 
  • 2 tbsp chives (snipped)

Method

Cook 1kg desiree potatoes (peeled and cut into 3cm pieces) in lightly salted boiling water until tender. Drain. Place 2 anchovies (mashed), 3 tbsp extra virgin olive oil, 1 1/2 tsp lemon juice, 1 tsp lemon rind (finely grated), a pinch of sugar, and salt and pepper in a small bowl and mix well. Transfer potato to a bowl and, while still warm, pour over dressing and toss gently. Just before serving, add 1 large ripe avocado (peeled, seeded and sliced), 2 tbsp flat-leaf parsley leaves (chopped) and 2 tbsp chives (snipped) and toss gently. Serve with pan-fried fish fillets.
