Ingredients

  • 4 green bananas
  • juice of 1 lime
  • 1 small onion, chopped
  • 1 tsp. chopped chives
  • salt to taste
  • pepper to taste
  • 3 cucumbers

Method

  • Boil bananas in their skins until tender, about 12 minutes. Remove skins.
  • Prepare pickle by combining lime juice, onion, chives, salt and pepper in a bowl.
  • Slice bananas and add them to juice, coating well.
  • Cover bowl and let stand at least 2 hours, tossing bananas in mix every 30 minutes.
  • Before serving, peel, core and chop cucumbers and garnish relish with cucumbers.
