Ingredients
- 4 green bananas
- juice of 1 lime
- 1 small onion, chopped
- 1 tsp. chopped chives
- salt to taste
- pepper to taste
- 3 cucumbers
Method
- Boil bananas in their skins until tender, about 12 minutes. Remove skins.
- Prepare pickle by combining lime juice, onion, chives, salt and pepper in a bowl.
- Slice bananas and add them to juice, coating well.
- Cover bowl and let stand at least 2 hours, tossing bananas in mix every 30 minutes.
- Before serving, peel, core and chop cucumbers and garnish relish with cucumbers.
