Ingredients
- 16 c. chopped red tomatoes
- 4 c. chopped onions
- 1 c. sugar
- 2 1/2 c. vinegar
- 1/3 c. pickle salt
- 1 to 1 1/2 c. jalapeno
- 1 1/2 Tbsp. chili powder
- 2 tsp. white pepper
- 2 tsp. ground cumin
- 2 tsp. alum
Method
- Mix in large kettle and bring to boil.
- Reduce to simmer. Cook for 1 1/2 hours, uncovered, stirring frequently.
- Ladle into jars and seal.
- Yields 8 to 10 pints.
