Ingredients

  • 1 large onion, cut in strips
  • 1 Tbsp. butter
  • 1 1/2 lb. baby carrots (about 6 cups/1.5 L) Target 2 lb For $3.00 thru 02/06
  • 1 can (10 oz/ 284 mL) chicken broth
  • 1 pkg (250 g) Philadelphia Brick Cream Cheese, cubed
  • 1 Tbsp. each: Dijon mustard and chopped parsley

Method

  • SAUTE onion in butter until softened; stir in carrots.
  • Add broth and bring to a boil.
  • Simmer uncovered for 10 minutes.
  • STIR in cheese and mustard and cook over low heat until smooth.
  • Stir in parsley.
