Ingredients
- 1 large onion, cut in strips
- 1 Tbsp. butter
- 1 1/2 lb. baby carrots (about 6 cups/1.5 L) Target 2 lb For $3.00 thru 02/06
- 1 can (10 oz/ 284 mL) chicken broth
- 1 pkg (250 g) Philadelphia Brick Cream Cheese, cubed
- 1 Tbsp. each: Dijon mustard and chopped parsley
Method
- SAUTE onion in butter until softened; stir in carrots.
- Add broth and bring to a boil.
- Simmer uncovered for 10 minutes.
- STIR in cheese and mustard and cook over low heat until smooth.
- Stir in parsley.
