Ingredients

  • 3 c. cooked rice
  • 3/4 c. chopped onion
  • 1/4 c. chopped green pepper
  • 1/4 c. chopped parsley
  • 3/4 c. chopped celery
  • 1 (4 oz.) can mushrooms (stems and pieces)
  • 1 lb. bulk pork sausage
  • 1 c. corn bread crumbs
  • 2 eggs, slightly beaten
  • 1 1/4 c. (1 can) chicken broth
  • 1/2 tsp. salt
  • 1/4 tsp. pepper

Method

  • Combine all ingredients and mix well. Turn into lightly buttered casserole dish. Cover and bake at 350° for 30 minutes. Remove cover and continue baking for 15 minutes. Serves 6.
