Ingredients

  • 1 1/4 c. sifted all-purpose flour
  • 3 tsp. baking powder
  • 2 Tbsp. sugar
  • 1/2 tsp. salt
  • 1 beaten egg
  • 1 c. milk
  • 2 Tbsp. oil
  • 1/2 tsp. vanilla

Method

  • Sift together flour, baking powder, sugar and salt.
  • Combine egg, milk, salad oil and vanilla.
  • Add to dry ingredients, stirring just until flour is moistened.
  • Batter will be lumpy. Bake on hot griddle.
  • Griddle is hot when a drop of water propped on it dances.
  • Use 1/4 cup batter per pancake.
  • Makes about 10 (3 to 4-inch) pancakes.
