Ingredients
- 1 1/4 c. sifted all-purpose flour
- 3 tsp. baking powder
- 2 Tbsp. sugar
- 1/2 tsp. salt
- 1 beaten egg
- 1 c. milk
- 2 Tbsp. oil
- 1/2 tsp. vanilla
Method
- Sift together flour, baking powder, sugar and salt.
- Combine egg, milk, salad oil and vanilla.
- Add to dry ingredients, stirring just until flour is moistened.
- Batter will be lumpy. Bake on hot griddle.
- Griddle is hot when a drop of water propped on it dances.
- Use 1/4 cup batter per pancake.
- Makes about 10 (3 to 4-inch) pancakes.
