Ingredients

  • 1 1/2 c. flour (white or wheat)
  • 1 1/2 tsp. baking soda
  • 1 tsp. cinnamon
  • 1/2 tsp. salt
  • 3 c. oats
  • 1 c. raisins, dates or blueberries
  • 2 eggs
  • 1 (16 oz.) plain, nonfat yogurt
  • 1/4 c. canola oil
  • 1/2 c. applesauce
  • 1 1/2 c. honey
  • 1 tsp. vanilla

Method

  • In a large bowl, stir together flour, baking soda, cinnamon, salt, oats and raisins (or dates or blueberries). In a medium bowl, stir together the eggs, yogurt, canola oil, applesauce, honey and vanilla. Pour wet ingredients into the dry and stir well. Pour into a well-greased 9 x 13-inch pan. Bake in preheated 350° oven about 30 minutes. Cool before cutting.
