Ingredients

  • 2 cornish game hens
  • Salt and grnd pepper
  • 2 warm Italian sausages, cut into 3/4 inch slices
  • 1 clove garlic, chopped
  • 1 med. onion, sliced
  • 1 green pepper, sliced
  • 1 sweet red pepper, sliced
  • 1 (8 ounce.) can tomatoes (undrained)
  • 3/4 teaspoon oregano

Method

  • Cut hens in half lengthwise and remove back bones.
  • Season well with salt and pepper.
  • Place in shallow roasting pan.
  • Brown sausages in skillet; pour off fat.
  • Stir in garlic, onions, and peppers; saute/fry 2 min.
  • Add in tomatoes and oregano.
  • Bring to a simmer; pour over hens.
  • Bake at 375 degrees for 45 to 55 min, or possibly till hens are tender, basting occasionally.
  • Serve with buttered linguine topped with fresh grated Parmesan cheese, minced parsley, and a few Tbsp.
