Ingredients
- 1 lb. fresh or frozen perch
- 2 Tbsp. minced parsley
- 1 garlic clove, minced
- 3 Tbsp. olive oil
- 1 c. hot water
- 1 tsp. salt
- 1/8 tsp. pepper
- pinch of oregano
Method
- Wipe
- fillets
- with paper towel.
- Cut fish into serving pieces.
- Cook
- parsley
- and
- garlic
- in hot oil in skillet for 3 minutes.
- Add
- hot water and bring to a boil.
- Add fish and seasoning. Cover and bring again to boil and cook for 5 to 10 minutes or until fish flakes easily.
- Serve with liquid.
- Very good over rice.
