Ingredients

  • 1/2 medium onion, finely chopped
  • 2 Tbsp. butter
  • 3 Tbsp. vegetable oil
  • 1/2 lb. bacon, cubed and cooked
  • 1 1/2 c. canned Italian tomatoes
  • 1/2 to 1 small dried red hot pepper, chopped fine
  • salt to taste (about 1 1/2 tsp.)
  • 1 lb. penne (hollow, thick spaghetti)
  • 3 Tbsp. fresh grated Parmesan cheese
  • 1 Tbsp. fresh grated Romano cheese

Method

  • Cook bacon (soft).
  • Set aside.
  • Saute onions until pale gold. Combine with bacon.
  • Saute 1 minute.
  • (Use bacon grease.)
  • Add tomatoes, pepper and salt.
  • Set aside.
