- 1/2 medium onion, finely chopped
- 2 Tbsp. butter
- 3 Tbsp. vegetable oil
- 1/2 lb. bacon, cubed and cooked
- 1 1/2 c. canned Italian tomatoes
- 1/2 to 1 small dried red hot pepper, chopped fine
- salt to taste (about 1 1/2 tsp.)
- 1 lb. penne (hollow, thick spaghetti)
- 3 Tbsp. fresh grated Parmesan cheese
- 1 Tbsp. fresh grated Romano cheese
Method
- Cook bacon (soft).
- Set aside.
- Saute onions until pale gold. Combine with bacon.
- Saute 1 minute.
- (Use bacon grease.)
- Add tomatoes, pepper and salt.
- Set aside.
