Ingredients

  • 2 c all-purpose flour
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 3/4 c quick oats
  • 3/4 c dark brown sugar, packed
  • 3/4 c white sugar
  • 1 c salted butter, softened
  • 2 large eggs
  • 2 tsp pure vanilla extract
  • 1 c (4 oz) chopped pecans
  • 1 c semisweet chocolate chips

Method

  • Preheat oven to 300 degrees.
  • In a medium bowl combine flour, soda, salt and oats. mix well with wire whisk and set aside.
  • In a large bowl blend sugars with an electric mixer at medium speed. Add butter and mix to form a grainy paste.
  • Scrape down sides of bowl, then add eggs and vanilla.
  • Beat at medium speed until fully combined.
  • Add the flour mixture, pecans and chocolate chips, and blend at low speed just until combined.
  • Do not overmix.
  • Drop dough by rounded tbsp onto ungreased cookie sheets, 1 1/2 inches apart.
  • Bake for 18-20 minutes.
  • Immediately transfer cookies with a spatula to a cool, flat surface.

  • 3 dozen.
