Ingredients
- 2 c all-purpose flour
- 1 tsp baking soda
- 1/4 tsp salt
- 3/4 c quick oats
- 3/4 c dark brown sugar, packed
- 3/4 c white sugar
- 1 c salted butter, softened
- 2 large eggs
- 2 tsp pure vanilla extract
- 1 c (4 oz) chopped pecans
- 1 c semisweet chocolate chips
Method
- Preheat oven to 300 degrees.
- In a medium bowl combine flour, soda, salt and oats. mix well with wire whisk and set aside.
- In a large bowl blend sugars with an electric mixer at medium speed. Add butter and mix to form a grainy paste.
- Scrape down sides of bowl, then add eggs and vanilla.
- Beat at medium speed until fully combined.
- Add the flour mixture, pecans and chocolate chips, and blend at low speed just until combined.
- Do not overmix.
- Drop dough by rounded tbsp onto ungreased cookie sheets, 1 1/2 inches apart.
- Bake for 18-20 minutes.
- Immediately transfer cookies with a spatula to a cool, flat surface.
- Yield:
- 3 dozen.
