Ingredients

  • 1 cup Chopped Pecans
  • 1 cup Packed Brown Sugar
  • 1/2 cups All-purpose Flour
  • 1/2 cups Butter, Melted
  • 2 whole Eggs, Slightly Beaten
  • 1 teaspoon Vanilla Extract

Method

  • Preheat oven 350°F.
  • Combine pecans, brown sugar and flour. Add eggs to the melted butter, then add to the dry ingredients. Add vanilla. Mix well.
  • Fill muffin cups two-thirds full.
  • For regular muffins, bake for 20 to 25 minutes. For mini muffins, bake 16 to 18 minutes.
  • Remove from muffin tins immediately.
