Ingredients
- 1 cup Chopped Pecans
- 1 cup Packed Brown Sugar
- 1/2 cups All-purpose Flour
- 1/2 cups Butter, Melted
- 2 whole Eggs, Slightly Beaten
- 1 teaspoon Vanilla Extract
Method
- Preheat oven 350°F.
- Combine pecans, brown sugar and flour. Add eggs to the melted butter, then add to the dry ingredients. Add vanilla. Mix well.
- Fill muffin cups two-thirds full.
- For regular muffins, bake for 20 to 25 minutes. For mini muffins, bake 16 to 18 minutes.
- Remove from muffin tins immediately.
