Ingredients

  • 1/2 cup walnut pieces
  • 1/4 cup sugar
  • 1 tbsp olive oil
  • 6 cup mixed greens, baby lettuce or baby spinach
  • 1 pear
  • 1/3 cup prepared vinaigrette dressing
  • 1/2 cup dried cherries or dried cranberries
  • 1/2 cup crumbled gorgonzola (or any crumbly cheese like queso fresco)

Method

  • Line a baking sheet with foil, coat with non-stick spray.
  • Combine walnuts and sugar and oil in a medium skillet, place over medium high until sugar begins to melt (don't stir yet).
  • Reduce heat to low, cook and stir until sugar turns golden brown and walnuts are coated.
  • Remove from heat and carefully pour mixture onto foil sheet.
  • Let cool and break into pieces.
  • Slice pear very thinly, discard seeds and core.
  • Pour dressing over pears in a small bowl, set aside or cover and refrigerate.
  • Right before serving, toss greens with pear and dressing mixture.
  • Top with cherries, cheese and candied walnuts.
