Ingredients

  • 2 c. shortening
  • 2 1/4 qt. dark brown sugar
  • 3 c. peanut butter
  • 12 eggs
  • 3 lb. flour
  • 1 Tbsp. salt
  • 5 Tbsp. baking powder
  • 1 qt. milk
  • 1/4 c. vanilla

Method

  • In mixing bowl, thoroughly cream shortening, sugar and peanut butter.
  • Beat in eggs, one at a time, until blended well.
  • In separate bowl sift flour, salt and baking powder together.
  • In a separate bowl, mix milk and vanilla.
  • Mix dry ingredients, alternating with milk and peanut butter mixture.
  • Blend well.
  • Use #24 scoop and portion into cupcake liners.
  • Bake for 20 to 25 minutes at 350°.
  • Remove from pan and cool.
