Ingredients

  • Peanut Butter Ice Cream with Nerds
  • 1 cup Creamy Peanut Butter
  • 2/3 cup Sugar
  • 1/3 cup Milk
  • 2/3 cup Half and Half
  • 2 cups Heavy Cream
  • 1 1/2 teaspoons Vanilla Extract
  • 6 Nerds (Mini Boxes)
  • Chocolate Marshmallows
  • 3/4 cup Water
  • 1/2 cup Water
  • 2 cups Sugar
  • 2 tablespoons Gelatin
  • 1/8 teaspoon Salt
  • 1 tablespoon Vanilla Extract
  • 1/2 cup Cocoa Powder
  • Powdered Sugar

Method

  • Put the peanut butter and sugar in a bowl, and whisk until they're combined.
  • Whisk in the milk and half-and-half on low until it's creamy, it should take about 2 minutes.
  • Whisk in the vanilla and heavy cream, then cover it and chill in the fridge for a couple hours.
  • Pour the mixture into your ice cream maker, and run according to your machine's instructions. Add the nerds in at the end just before the ice cream starts firming up.
  • Pour the gelatin and 1/2 cup of water into a bowl.
  • Bring the other 3/4 cup of water to a slow boil, then stir in the sugar until it dissolves. Keep it on medium for another 15 minutes, and give it a stir a few times while it's on the stove.
  • Pour the mixture in a stand mixer and mix on low for 30 minutes. Add cocoa powder after 25 minutes.
  • Cover the bottom of a container (like a tupperware) in wax paper, spray it with non-stick spray, and dust it with powdered sugar. Then pour your mixture in and freeze overnight.
  • After freezing, dust with plenty of powdered sugar (don't hold back, folks), and cut into whatever shapes you want. Serve with ice cream.
