Ingredients
- 6 oz cream cheese, softened
- 2 Tbsp apricot preserves
- 1 c drained pineapple tidbits
- 3 (16 oz) cans peach halves, drained
- lettuce leaves
Method
- Beat the cream cheese and preserves in a mixing bowl with an electric mixer until well blended. Stir in the pineapple. Place the peach halves cut side up on a lettuce-lined platter. Fill each half with some of the cream cheese mixture. Garnish with fresh mint if desired. Serves about 15.
