Ingredients
- 1 lb. pork, cut into 3/4-inch cubes
- 1 Tbsp. taco seasoning mix (purchased)
- 2 tsp. vegetable oil
- 1 (8 oz.) bottle chunky salsa (purchased)
- 1/3 c. peach preserves
Method
- Coat pork cubes with taco seasoning. Heat oil in large nonstick skillet over medium-high heat.
- Add pork and cook to brown, stirring occasionally.
- Add salsa and preserves to pan. Lower heat.
- Cover and simmer for 15 to 20 minutes. Serve with hot rice and mixed bean salad.
- Serves four.
