Ingredients
- 1 (16 oz.) can sliced peaches
- 2 (3 oz.) pkg. peach or apricot-flavored jello
- 1/2 c. sugar
- 2 c. boiling water
- 1 tsp. vanilla or almond extract
- 1 (8 oz.) carton whipped cream
- additional peaches (optional)
Method
- Drain peaches, reserving 2/3 cup juice.
- Chop peaches into small pieces; set aside.
- In another bowl, dissolve gelatin and sugar in boiling water.
- Stir in reserved syrup.
- Chill until slightly thickened.
- Stir vanilla and whip cream.
- Gently fold into gelatin.
- Fold in peaches. Pour into mold sprayed with Pam or any other spray you use.
- Chill overnight.
- Unmold and garnish with peaches, if desired.
- Yield:
- 8 to 10 servings.
