Ingredients

  • 1 (16 oz.) can sliced peaches
  • 2 (3 oz.) pkg. peach or apricot-flavored jello
  • 1/2 c. sugar
  • 2 c. boiling water
  • 1 tsp. vanilla or almond extract
  • 1 (8 oz.) carton whipped cream
  • additional peaches (optional)

Method

  • Drain peaches, reserving 2/3 cup juice.
  • Chop peaches into small pieces; set aside.
  • In another bowl, dissolve gelatin and sugar in boiling water.
  • Stir in reserved syrup.
  • Chill until slightly thickened.
  • Stir vanilla and whip cream.
  • Gently fold into gelatin.
  • Fold in peaches. Pour into mold sprayed with Pam or any other spray you use.
  • Chill overnight.
  • Unmold and garnish with peaches, if desired.
  • Yield:
  • 8 to 10 servings.
