Ingredients

  • 1 c. flour
  • pinch of salt
  • 1/4 c. butter
  • 1 egg yolk
  • 1 tsp. lemon juice
  • cold water
  • 1 egg, beaten with 3 tsp. milk, to glaze

Method

  • Place flour and salt in a bowl.
  • Add butter.
  • With fingertips only, mix to a bread crumb consistency.
  • Mix in egg yolk and lemon juice.
  • With a knife, cut in 1 teaspoon water, adding a little more if necessary to form a stiff dough.
  • Turn out onto a floured board and knead gently into a small ball.
  • If using to make a pie, roll out to size of pie plate.
  • Carefully line pie plate with crust. Prick base with a fork.
  • Bake at 350° for 15 to 20 minutes or until golden brown.
  • Makes bottom crust for one 8-inch pie.
