Ingredients
- 1 c. flour
- pinch of salt
- 1/4 c. butter
- 1 egg yolk
- 1 tsp. lemon juice
- cold water
- 1 egg, beaten with 3 tsp. milk, to glaze
Method
- Place flour and salt in a bowl.
- Add butter.
- With fingertips only, mix to a bread crumb consistency.
- Mix in egg yolk and lemon juice.
- With a knife, cut in 1 teaspoon water, adding a little more if necessary to form a stiff dough.
- Turn out onto a floured board and knead gently into a small ball.
- If using to make a pie, roll out to size of pie plate.
- Carefully line pie plate with crust. Prick base with a fork.
- Bake at 350° for 15 to 20 minutes or until golden brown.
- Makes bottom crust for one 8-inch pie.
