Ingredients
- butter, melted
- peeled and rinsed yam, sliced thicker then a nickel (Bobby says let these dry)
- nutmeg
- cinnamon
- brown sugar (Bobby says heavy on this)
- granulated sugar (bobby says heavy on this)
- salt (Bobby says sprinkle this with your fingers lightly)
- molasses
- vanilla extract (Bobby says use a capful at a time, start with that)
Method
- Preheat oven to 325.
- Grease a glass baking dish.
- Layer the bottom with the sliced yams.
- Spread some melted butter across the yams with a pastry brush till they are wet.
- Top the yams with with nutmeg, cinnamon, brown sugar, granulated sugar, salt.
- Repeat layers till you have 4 layers.
- Once your layers are complete mix together more melted butter, nutmeg, cinnamon, brown sugar, granulated sugar, molasses, and vanilla extract and pour over the completed layers.
- Cover the dish with foil and place in the middle of the oven to bake for 30-45.
- Remove dish from oven pour off 1/2 grease/syrup mix reserving for later use.
- Do not cover the dish back up just place dish back in oven.
- While the dish is back in the oven taste the grease/syrup mix and add more nutmeg, cinnamon, brown sugar, granulated sugar, and molasses to taste.
- Bobby says do not add anymore vanilla extract.
- Now remove the dish again and pour the grease/syrup back over the yams (Bobby said you will not need all the grease/syrup).
- Return the dish back to the oven and bake another 20 minutes.
- Again remove the dish and drain off 1/2 the grease/syrup mix.
- Return dish to the oven, mix the syrup pour over yams and bake 10-15 minutes.
- Check with a fork and if the yams are fork tender turn the oven down to 150-200.
- Again add more nutmeg, cinnamon, brown sugar, granulated sugar, and molasses to taste.
- Pour the grease/syrup back over the yams (Bobby says you will not need all of the grease/syrup so do not fill this to the top).
- Turn off the oven and leave the dish in the oven for 10-15 minutes.
- Bobby says if there's to much grease/syrup at this point pour it off and discard.
