Ingredients

  • Tuna, white Albacore, in water, two 7 oz cans
  • 1-1 1/2 Lemon, squeezed
  • 4-5 tbl small capers
  • 1/4 cup fine chopped onion
  • 1/2-3/4 cup mayonnaise
  • 1/4-1/2 tsp curry powder
  • salt and pepper

Method

  • Open cans, press tops to get as much water out as possible. Break chunks into large flakes in mixing bowl.
  • Mix in lemon juice, then mix in capers (press out brine) and onion.
  • Stir in mayo, then the curry and pepper. Salt, as needed, adjust if more curry, onion, capers needed.
  • Good on wheat or Italian bread, with lettuce.
