Ingredients

  • 1 1/2 c. chicken broth
  • 2 Tbsp. flour
  • 2 Tbsp. diet margarine
  • 2 Tbsp. lemon juice
  • 8 oz. egg noodles
  • flowerets of 1 bunch broccoli
  • 3 or 4 medium carrots, sliced thin
  • 1 large onion, chopped

Method

  • Saute margarine and large onion in pan for about 3 or 4 minutes; add broccoli and carrots and cook 5 more minutes.
  • Add broth, lemon juice and flour.
  • Cook until thickens, stirring constantly.
  • Cook noodles using package directions.
  • Drain.
  • Pour sauce mixture over noodles.
  • May use rice instead of noodles. Yields 6 servings.
