Ingredients
- 1 1/2 c. chicken broth
- 2 Tbsp. flour
- 2 Tbsp. diet margarine
- 2 Tbsp. lemon juice
- 8 oz. egg noodles
- flowerets of 1 bunch broccoli
- 3 or 4 medium carrots, sliced thin
- 1 large onion, chopped
Method
- Saute margarine and large onion in pan for about 3 or 4 minutes; add broccoli and carrots and cook 5 more minutes.
- Add broth, lemon juice and flour.
- Cook until thickens, stirring constantly.
- Cook noodles using package directions.
- Drain.
- Pour sauce mixture over noodles.
- May use rice instead of noodles. Yields 6 servings.
