Ingredients
- 8 oz. whole wheat or regular pasta twists
- 1/2 lb. lean bacon
- 1 Tbsp. oil
- 1 onion, diced
- 2 to 4 Tbsp. vinegar
- pinch of cayenne pepper
- 1 small endive, cut into thin strips
- 1/2 c. chopped fresh chives or 1 Tbsp. dried chives
Method
- Cook pasta in boiling, salted water until just tender following package directions; drain.
- Cook bacon until crisp; drain on paper towels.
- Heat oil in saucepan.
- Add onion and saute until translucent.
- Remove from heat; add vinegar and cayenne pepper.
- Mix pasta, endive, chives and warm dressing together in salad bowl.
- Sprinkle with crisp bacon and serve at once.
