Ingredients

  • 8 oz. whole wheat or regular pasta twists
  • 1/2 lb. lean bacon
  • 1 Tbsp. oil
  • 1 onion, diced
  • 2 to 4 Tbsp. vinegar
  • pinch of cayenne pepper
  • 1 small endive, cut into thin strips
  • 1/2 c. chopped fresh chives or 1 Tbsp. dried chives

Method

  • Cook pasta in boiling, salted water until just tender following package directions; drain.
  • Cook bacon until crisp; drain on paper towels.
  • Heat oil in saucepan.
  • Add onion and saute until translucent.
  • Remove from heat; add vinegar and cayenne pepper.
  • Mix pasta, endive, chives and warm dressing together in salad bowl.
  • Sprinkle with crisp bacon and serve at once.
