Ingredients

  • 1/2 c. Ricotta cheese
  • 1/4 lb. bacon, fried and crumbled
  • 1/2 medium red onion, sliced
  • 1 egg
  • 1/4 c. olive oil
  • 1/4 lb. linguini pasta
  • 2 cloves garlic, mashed

Method

  • Cook pasta al dente.
  • Keep warm.
  • Heat oil, garlic and onion in a medium skillet until onions wilt; add bacon and take off heat.
  • Stir together cheese and egg.
  • Add pasta to skillet with oil, onion, garlic and bacon; toss.
  • Add cheese and egg mixture and return to heat until egg curdles.
  • Serve with crunchy French bread and enjoy.
