Ingredients
- 1/2 c. Ricotta cheese
- 1/4 lb. bacon, fried and crumbled
- 1/2 medium red onion, sliced
- 1 egg
- 1/4 c. olive oil
- 1/4 lb. linguini pasta
- 2 cloves garlic, mashed
Method
- Cook pasta al dente.
- Keep warm.
- Heat oil, garlic and onion in a medium skillet until onions wilt; add bacon and take off heat.
- Stir together cheese and egg.
- Add pasta to skillet with oil, onion, garlic and bacon; toss.
- Add cheese and egg mixture and return to heat until egg curdles.
- Serve with crunchy French bread and enjoy.
