Ingredients

  • 2 lb. ground chuck
  • 1 1/4 c. soft breadcrumbs
  • 1 c. chopped fresh parsley
  • 3/4 c. chopped onion
  • 1 egg, beaten
  • 2 Tbsp. chopped green pepper
  • 1 large clove garlic, minced
  • 1/2 tsp. salt
  • 1/2 tsp. dried whole thyme
  • 1/2 tsp. freshly ground pepper
  • 1/4 tsp. ground allspice
  • 1/8 tsp. ground nutmeg
  • 1/8 tsp. red pepper
  • 3 bay leaves
  • 1 Tbsp. catsup

Method

  • Combine all ingredients except bay leaves and catsup; stir well.
  • Shape into a loaf and place in a 9 x 5 x 3-inch two-piece loaf pan with drain holes in the bottom.
  • Arrange bay leaves on top.
  • Bake at 350° for 1 hour and 20 to 25 minutes or until done. Remove from pan and discard bay leaves; spread catsup over meat loaf.
