Ingredients

  • 1 papaya, peeled, seeded, sliced
  • 2 ripe avocados, peeled, sliced
  • 6 Tbsp. lemon juice
  • 1/2 tsp. chili powder
  • bok choy or iceberg lettuce
  • 1 (11 oz.) can mandarins, drained
  • 6 Tbsp. olive oil
  • 2 green onions, finely chopped
  • salt and pepper to taste

Method

  • Combine papaya, mandarins and avocados in bowl.
  • Beat together remaining ingredients until well blended, pour over mixture. Cover and refrigerate several hours, turning mixture 2 or 3 times. Serve on bed of bok choy or lettuce.
  • Serves 4.
