Ingredients
- 1 papaya, peeled, seeded, sliced
- 2 ripe avocados, peeled, sliced
- 6 Tbsp. lemon juice
- 1/2 tsp. chili powder
- bok choy or iceberg lettuce
- 1 (11 oz.) can mandarins, drained
- 6 Tbsp. olive oil
- 2 green onions, finely chopped
- salt and pepper to taste
Method
- Combine papaya, mandarins and avocados in bowl.
- Beat together remaining ingredients until well blended, pour over mixture. Cover and refrigerate several hours, turning mixture 2 or 3 times. Serve on bed of bok choy or lettuce.
- Serves 4.
