Ingredients

  • 1-2 Garlic cloves
  • Salt
  • 1/2 teaspoon fresh ginger
  • Pepper
  • Skirt Steak (or Ribeye)
  • Olive oil
  • 1 tablespoon butter
  • 1 fat shallot
  • 1/4 cup red wine
  • Parsley

Method

  • Chop garlic fine
  • Grind garlic into paste using 1/4 teaspoon of salt and flat of knife blade.
  • Mix ginger into garlic paste
  • Add pepper to paste
  • Rub onto both sides of the steak
  • Put a tiny bit of oil on a skillet and heat until almost smoking
  • Sear the steak for 1 minute on high heat on each side
  • Put the pan into a preheated 350 degree oven for about 8 minutes (for a ribeye)
  • Remove steak
  • Swirl butter in pan, saute the shallot for a minute and splash in the wine
  • Reduce by half
  • Pour the sauce over the steak
  • Garnish with freshly chopped parsley
